Hot Lime, a craft taco and ceviche concept, is expanding to St. Roch Market in the Miami Design District this winter. The eatery is the creation of Daniel Gonzalez, Jaime Villanueva, and Carlos Padilla. The trio has been friends since high school, and together, boast decades of restaurant experience working at Miami’s top dining establishment including Vagabond Bar, Dragonfly Izakaya and Fish Market, the BLT Prime Restaurant, and the Island Bistro, alongside Michelin star chef, Steven Rojas. They tested the concept at  South Florida’s Yellow Green Farmer’s Market in 2015.

Their St. Roch Market menu will feature dishes that reflect Miami’s diverse cultural scene, including Peruvian-influenced ceviche like smoked corvina, marinated in aji amarillo sauce and Argentinian-influenced tacos with sautéed shrimp in olive oil chile de arbol garlic sauce. Along with an expansive ceviche and taco selection, Hot Lime will offer gluten-free corn tortillas and made-to-order guacamole, prepared counter-side.
